The Ultimate Breakfast Burrito in Less Than 10 Minutes

This delicious Breakfast Burrito is a fantastic way to start your day! Super easy to make and incredibly cheap! Filled with healthy ingredients, this colourful masterpiece will tingle your taste buds and boost your energy ready for the day.   • 2-3 eggs depending on appetite
  • 2 spring onions finely sliced
  • 2-3 slices of salt beef
  • 1/2 an onion finely diced
  • 1/2 a pepper finely diced
  • 1/4 tsp coconut oil
  • Lettuce – as much as you like
  • 2 large tortilla wraps
  • Grated cheese – as much as you like
  • Sauce of your choosing – recommendation Ketchup & Mayonnaise or BBQ

Add the coconut oil to the saucepan on a medium heat until melted. Place the peppers and onions on the pan and cook for around 2 to 3 minutes. Add the salt beef and spring onions and stir them in.

Crack in the eggs and mix them into the ingredients and scramble together. Add the cheese when the eggs are nearly complete, turn off the heat when the cheese is completely melted.

Add the sauce to the tortilla wraps (as much as you’d like). Then add an even amount of eggs to both tortillas, topping with some shredded lettuce.

Lift the Tortilla at the sides to line the contents inside. Then lift the bottoms and fold them in. Take one of the sides while still holding the bottoms and completely lift it over the ingredients and push it back to start the roll. Finish pushing the wrap over itself and rest it so the seam is on the plate.

Feel free to serve this with a side salad and voila, you have a fantastic breakfast burrito ready to consume!
